Die Region ist bekannt f\u00fcr ihre hei\u00dfen, feuchten Sommer und kalten, trockenen Winter. Ichiro Akuto stammt aus einer Familie mit einer langen Brautradition; sie begannen bereits um 1625 mit der Sake-Produktion in Chichibu. Die Brennerei wurde 2004 gegr\u00fcndet und nahm 2008 den Betrieb auf. Sie war damit die erste neue japanische Brennerei seit 1973. Chichibu ist zwar eine eher kleine Brennerei, hat aber einige bemerkenswert hervorragende Malts produziert, von denen einige durch ein gutes Ma\u00df an Torfw\u00e4rme gekennzeichnet sind. Ein Teil der Gerste, die Chichibu verwendet, wird lokal angebaut, und es wird eine Vielzahl von Produktionstechniken eingesetzt. Um einen besonders unverf\u00e4lschten Whisky herzustellen, legt man bei Chichibu gro\u00dfen Wert auf eine nat\u00fcrliche Verarbeitung und unverf\u00e4lschte Farben. Au\u00dferdem verzichtet die Chichibu Brennerei auf Kaltfiltrierung. So werden hier Jahr f\u00fcr Jahr rund 90.000 Liter der gesch\u00e4tzten Spirituose hergestellt. Ungef\u00e4hr ein Drittel der Produktion geht in den internationalen Markt, haupts\u00e4chlich nach Gro\u00dfbritannien, Frankreich und Taiwan, der weitaus gr\u00f6\u00dfere Anteil bleibt jedoch im Land. Chichibu Whiskys sind sehr gefragt und deshalb auch meist wenige Tage nach ihrer Ankunft in den L\u00e4den bereits ausverkauft.<\/p>\n<p><strong>Fun Fakt:<\/strong> Chichibu verf\u00fcgt \u00fcber insgesamt acht durchaus eindrucksvolle Wash Backs in ihrer Destillerie. Alle sind aus einem besonders wertvollem Holz gefertigt, der Mizunara Eiche (Japanische Eiche).
