Im Dezember 2017 begann das Unternehmen mit der Destillation von Whisky, wobei drei Brennblasen von Forsyths of Rothes verwendet wurden. Die Abtei von Lindores plante urspr\u00fcnglich, 150.000 Liter Spirituosen pro Jahr zu produzieren.<br \/>\nDie Brennerei befindet sich auf der Lindores Abbey Farm, die 1913 von Drew McKenzie Smiths Gro\u00dfvater gekauft wurde. Die Familie besitzt die Brennerei und Drew McKenzie Smith tr\u00e4gt den Titel \u00ab\u00a0Custodian of Lindores\u00a0\u00bb, da die Familie H\u00fcter des Gel\u00e4ndes der Abtei ist. Die Destillateure haben eine Preservation Society gegr\u00fcndet, deren Aufgabe es ist, die Abtei f\u00fcr zuk\u00fcnftige Generationen zu erhalten.<br \/>\nDie hier verwendete Gerste wird in Fife angebaut und es ist seit Mitte 2019 die Sorte Concerto, die auf zwei Farmen angebaut wird, die an das Anwesen der Abtei angrenzen. Bis Ende 2019 verwendete die Brennerei \u00ab\u00a0ausschlie\u00dflich lokal angebaute Lindores-Gerste\u00a0\u00bb. Im Jahr 2021 brachte Lindores Abbey seinen ersten Single Malt Whisky auf den Markt, den Lindores Single Malt Scotch Whisky MCDXCIV. Aktuelle j\u00e4hrliche Produktionsmenge: ca. 260.000l Alk.<\/p>\n<p><strong>Fun Fakt 1: <\/strong>Laut Mackenzie Smith sah sich das Unternehmen trotz der historischen Wurzeln von Lindores mit mindestens einer markenrechtlichen Anfechtung durch Verbrauchermarken konfrontiert, die sich auf die Verwendung des Namens Abbey bezogen hatten. Daher wird die Brennerei niemals einen Schokoladenlik\u00f6r herstellen, um einen Kampf mit Lindt, dem Hersteller von Lindor-Schokolade, zu vermeiden.<\/p>\n<p><strong>Fun Fact 2:<\/strong> Ein spezieller Hefestamm, der m\u00f6glicherweise im 15. Jahrhundert existiert hat, wird in Zusammenarbeit mit der Heriot-Watt University repliziert und zur Herstellung eines Single Malts in limitierter Auflage verwendet. Dar\u00fcber hinaus wird anstelle der Herstellung eines Gins ein Teil der neuen Spirituose von Lindores f\u00fcr die Herstellung von \u00ab\u00a0Aqua Vitae\u00a0\u00bb beiseite gelegt \u2013 einer Malzspirituose, die mit lokalen Kr\u00e4utern wie s\u00fc\u00dfem Cicely mazeriert wird und an den Ufern des Flusses Tay reichlich w\u00e4chst.<\/p>\n<p><strong>Whisky\/Whiskey: The Exclusive Cask No.18\/577 3yo<br \/>\n<\/strong>Diese streng limitierte Einzelfassabf\u00fcllung reifte drei Jahre lang in einem sorgf\u00e4ltig ausgew\u00e4hlten Oloroso Sherry Butt (Cask #18\/577). Mit zwei Single-Cask-Abf\u00fcllungen pr\u00e4sentiert Lindores die Serie \u00ab\u00a0The Exclusive Cask\u00a0\u00bb in Deutschland.
