Es ist bis heute nicht ganz klar ob Highland Park vom ber\u00fchmten Priester und Schmuggler Magnus Eunson oder vom Farmer David Robertson gegr\u00fcndet wurde. Fakt ist, dass das reich verzierte, schmiedeeiserne Tor der Brennerei auf eine Geschichte von 1798 hinweist. Fakt ist auch, dass sie 1826 eine erste offizielle Lizenz zum Destillieren von Whisky bekamen. Highland Distillers \u00fcbernahmen 1937 die volle Kontrolle am Unternehmen, sodass Highland Park heute Teil der Edrington Group ist. Der Name der Brennerei bezieht sich nicht auf die schottischen Highlands, sondern auf die Tatsache, dass die Brennerei auf einem Gebiet namens \u00ab\u00a0High Park\u00a0\u00bb gegr\u00fcndet wurde, das sich von einem niedrigeren Gebiet in der N\u00e4he unterscheidet. Aktuelles j\u00e4hrliches Produktionsvolumen: ca. 2,5 Mio. Liter.<\/p>\n<p><strong>Fun Fakt: <\/strong>Highland Park Distillery ist die zweitn\u00f6rdlichste Single Malt Scotch Whisky Destillerie in Schottland (Kimbland Destillerie auf Sanday liegt 22 Meilen weiter n\u00f6rdlich).<strong><br \/>\nFun fact No.2: <\/strong>Sollte der oben beschriebene Mythos stimmen, dass Magnus Eunson Highland Park gegr\u00fcndet hat, dann ist dieser Eunson tags\u00fcber ein Metzger und Kirchenbeamte gewesen, der sich Nachts zu einem illegalen Destillateur &amp; Whiskyschmuggler \u00ab\u00a0verwandelt\u00a0\u00bb hat. 1798 wurde er beim illegalen Destillieren von Whisky auf dem heutigen Gel\u00e4nde erwischt.<\/p>\n<p><strong>Whisky\/Whiskey: The Dolphins (2018) 2nd Release<br \/>\n<\/strong>Highland Park The Dolphins, ein offiziell lizenziertes Produkt f\u00fcr den Royal Navy Submarine Service, verk\u00f6rpert mit seinem nuancierten und komplexen Profil den Geist des Meeres. Als 2. Release aus der geschichtstr\u00e4chtigen Highland Park Distillery, abgef\u00fcllt im Jahr 2018 mit 40,0% Vol. in einer 700 ml Flasche, pr\u00e4sentiert dieser Single Malt Scotch Whisky einen komplizierten Tanz von Geschmacksrichtungen und Aromen, die den Gaumen sowohl faszinieren als auch herausfordern.<br \/>\nIn der Nase duftet es sanft von Pfirsich- und Birnenp\u00fcree, verwirbelt mit Vanille und einer Honig-Karamell-Mischung, angereichert mit Toffee-Noten. Das Erscheinungsbild von roten und dunkleren Fr\u00fcchten verleiht Tiefe, obwohl sie schwer fassbar bleiben und zur Komplexit\u00e4t des Whiskys beitragen, ohne das Bouquet zu dominieren. Ein Aufguss aus Kr\u00e4uter- und Gr\u00fcntee harmoniert nahtlos mit Shortbread, w\u00e4hrend Zitronengras, Haselnuss und ein Hauch von Gew\u00fcrzen im Hintergrund verweilen. Das Erlebnis wird durch eine leichte S\u00fc\u00dfe und einen fast schwer fassbaren Hauch von Rauch gemildert, wobei sich die Vanille mit der Zeit intensiviert, flankiert vom beruhigenden Aroma einer matschigen Banane.<br \/>\nBei der Verkostung zeigt sich The Dolphins als \u00e4u\u00dferst weich, mit Gew\u00fcrzen und einem leichten Fassgew\u00fcrz, das den Gaumen einleitet, gefolgt von einer bitteren Note, die an Kaffeepulver erinnert. Diese Bitterkeit weicht allm\u00e4hlich einer ausgepr\u00e4gteren Rauchigkeit, \u00e4hnlich wie aschiger Rauch oder Fasskohle, die sich irgendwie \u00ab\u00a0schal\u00a0\u00bb anf\u00fchlt. Ein zweiter Schluck mildert das Erlebnis weiter ab und bringt etwas mehr Fruchtigkeit ein, doch die Aromen verschmelzen zu einer muffigen und undeutlichen Verschmelzung und fordern den Trinker heraus, einzelne Noten inmitten des Sammelsuriums von Aromen zu erkennen. Der Abgang l\u00e4sst die Haselnuss deutlicher hervortreten, w\u00e4hrend der aschige Rauch nachl\u00e4sst, aber ohne eine definierende Aussage verblasst und einen leicht entt\u00e4uschenden Nachgeschmack hinterl\u00e4sst.
