Eine kleine Hand Craft Destillerie, die alles in Eigenleistung produziert und abf\u00fcllt. Hier werden Spirituosen noch in Handarbeit hergestellt. Hinter der Destillerie steht kein gro\u00dfer Konzern. Alle Produkte werden mit viel Leidenschaft und Liebe hergestellt. Peter Mulryan hat bei den Irish Distillers gearbeitet, bevor er sich entschloss seine eigene Destillerie zu gr\u00fcnden. Er kennt das irische Spirituosengesch\u00e4ft sehr gut und hat gerade deshalb sich auf die Herstellung von Whiskey und Gin spezialisiert. Kleine Sonderabf\u00fcllungen aus der Destillerien haben besonderen Charme und sind etwas ganz besonders. Seit 2018 gibt es nun auch die Whiskeydestillerie in Cappoquin. Peter Mulryan, der Eigent\u00fcmer der Destillerie, hat sich hier einen Traum verwirklicht und neben der Gin Destillerie nun auch die Whiskeydestillerie er\u00f6ffnet. Hier werden Single Malt und Single Pot Still Whiskeys nach alter Tradition produziert. Und wenn sie von alter Tradition sprechen, dann meinen sie dies auch so: alle Rezepturen f\u00fcr die Maische des Pot Stills sind Original und teilweise schon 100 Jahre alt. Dies erm\u00f6glicht den alten Whiskeystil wieder aufleben zu lassen.<\/p>\n<p><strong>Fun Fakt:<\/strong> erst kam der Gin&#8230; Der preisgekr\u00f6nte Gin: Blackwater No.5 &#8211; ein Flaggschiffprodukt der Brennerei ist ihr preisgekr\u00f6nter Blackwater No. 5 Gin. Dieser London Dry Gin wird in kleinen Chargen destilliert und zeichnet sich durch eine harmonische Balance von Wacholder, Zitrusnoten und einer feinen W\u00fcrze aus. Er hat zahlreiche Auszeichnungen erhalten und wird von Gin-Liebhabern auf der ganzen Welt gesch\u00e4tzt.<\/p>\n<p><strong>Whisky\/Whiskey: Clashmore 1824 Single Barrel Release<br \/>\n<\/strong>Vor der Gr\u00fcndung der Blackwater Distillery war Clashmore die letzte Destillerie in Waterford und wurde in den 1840er Jahren geschlossen. Ihr Schornstein der \u00fcberspannt noch immer den Fluss Greagagh, der durch das Herz des Dorfes Ballyduff flie\u00dft. Wie die Clashmore Distillery ihren Whisky mit welcher mash bill herstellte, ist bekannt. Allerdings bis jetzt nicht, wie dieser schmeckte. In Zusammenarbeit mit dem Lokalhistoriker Liam Dunne und dem Whisky-Archivar Charley Roche hat Blackwater Distillery\u2019s Head Distiller John Wilcox nun den Stil des alten Clashmore Whiskys reproduziert.<br \/>\nDie historische mash bill der Clashmore Distillery sah vor allem einen hohen Hafer-Anteil vor. Dieser ist typisch f\u00fcr Whiskys aus dieser Zeit. Damals Hafer wurde in West Waterford angebaut, dieser diente allerdings haupts\u00e4chlich als Pferdefutter. Und eine weitere Besonderheit weist der historische Whisky auf: Er lagerte ausschlie\u00dflich in Sherry-F\u00e4ssern. Damals gab es noch keine bourbon casks. Blackwater Irish Whisky \u201aClashmore 1824\u2018 erscheint in einer Auflage von nur 420 Flaschen, die einzeln nummeriert sind. Flasche Nr. 1 wurde dem Gemeinderat von Clashmore und Kinsalebeg zu Spendenzwecken gespendet.
