Die Feinbrennerei Simons produziert auf handwerkliche Weise Bavarian Whiskey, Gin und andere Spirituosen nach den Geboten der Nachhaltigkeit. Die Brennerei im bayerischen Spessart wird in f\u00fcnfter Generation von Severin Simon gef\u00fchrt. Er erweiterte das Sortiment in den letzten Jahren und errang auf verschiedenen Wettbewerben hohe Pr\u00e4mierungen f\u00fcr seine neuen, modern ausgerichteten Spirituosen. Seit 1879 stellt Simons Br\u00e4nde und Lik\u00f6re her. Der Urgro\u00dfvater des heutigen Hausherrn Severin Simon erwarb das Brennrecht und gr\u00fcndete die heutige Brennerei. 100 Jahre sp\u00e4ter wurden die ersten Weinberge angelegt und der Grundstein f\u00fcr das heutige Weingut gelegt. Man f\u00e4hrt also zweigleisig auf dem Hofgut Simon im Spessart. 2012 kam extra f\u00fcr das Destillieren von Whiskey eine neue Destillier-Anlage mit Swan Neck in die Feinbrennerei Simons. Mit der Fassreifung ausschlie\u00dflich in F\u00e4ssern aus Spessart-Eiche l\u00e4sst sich der Brennmeister die n\u00f6tige Zeit.<\/p>\n

Fun Fact:\u00a0<\/strong>Trotz aller Sortiments-Erweiterung ist die Fienbrennerei Simons eine Manufaktur f\u00fcr klassische Br\u00e4nde geblieben, die auch von der Fachpresse gelobt werden. Brennmeister Severin Simon legt h\u00f6chsten Wert auf Nachhaltigkeit, Qualit\u00e4t und Regionalit\u00e4t. So feuert er seine Destillen zum Beispiel mit Holz aus dem eigenen Wald. Simon verzichtet auch bewusst auf Steuerung oder Automatisierung. Denn nur der Rohstoff und die Kunst des Brennens sollen \u00fcber die Qualit\u00e4t der Br\u00e4nde entscheiden. Schon als Junge verbrachte er die kalten Wintertage auf dem Schoss des Gro\u00dfvaters in der Feinbrennerei, so dass er das urspr\u00fcngliche Handwerk beherrscht. In seiner Ausbildung zum Winzer und Techniker f\u00fcr Weinbau und Kellerwirtschaft entwickelte sich sein K\u00f6nnen weiter. Simon’s lie\u00df den Peated Single Malt in einem 100 l Tokajer-Fass f\u00fcr 50 Monate vollreifen. Es gibt daher nicht viele Flaschen der limitierten Abf\u00fcllung! Der Tokaijer tr\u00e4gt den Titel K\u00f6nigswein v\u00f6llig zurecht. Ein junger, wilder Whisky, ordentlich Torf, ordentlich Alkohol trotzdem Komplex.<\/p>\n
